Holiday Roasted Vegetables
Since much produce is out of season, substitute frozen Brussels sprouts and carrots this Thanksgiving. Oh, and feel free to add more of your favorite vegetables to this scrumptious recipe!
Here is what you will need for this delicious recipe:
- 3/4 lb. Brussels sprouts, trimmed and halved
- 2 large carrots, peeled and sliced into 1/2” pieces
- extra-virgin olive oil
- 1 tbsp. balsamic vinegar
- 1 tsp. chopped rosemary leaves
- 1 tsp. chopped thyme leaves
- 1/2 c. toasted pecans
- 1/2 c. dried cranberries

Melting Sweet Potatoes
- 1/2 lb. sweet potatoes, peeled and sliced crosswise into ½” coins
- 1 tbsp. melted butter
- kosher salt
- Freshly ground black pepper
- 1/4 c. maple syrup
- 1 tbsp. brown sugar
- 1/2 c. toasted pecans, chopped
